- 6 Tbsp. oil
- 1 onion
- 4 cloves garlic
- 1 Tbsp. paprika
- 2 tsp. cumin
- 1 tsp. chili powder
- 1/4 tsp. cayenne
- 6 cups chicken broth
- 3 cups crushed tomatoes
- 2 bay leaves
- 2 1/2 tsp. salt
- 1 can corn/1 cup frozen corn
- 1 can black beans
- 3 carrots
- 2 sticks celery
- tortilla chips
- Chop/slice vegetables (obviously); crush garlic into pot.
- Cook down onion, garlic, spices in oil in large pot.
- Add broth, tomatoes, beans. Boil.
- Add celery, carrots, corn; simmer ~30 minutes.
- Serve soup over tortilla chips.
